JUNE · I 895 to you of the work covering the analysis of the food the amount used etc and the same to be transmitted by you to the Govment Dept. through Dr. Atwater. A most interesting line of facts will be developed in our work which is this the Govt. Dept. will see that the masses are not eating food that will build up strong men and women mentally and morally. As their foods are deficient in Proteins or food for muscle arid brain and in place they use a great deal of fat and Carbohydrate necessary for energy and heat. We are now studying the Dietary of two families on Russell's Plantation about eight miles from here. The work with these families will close on Monday afternoon of next week. We are now just beginning a line of work in our Institution that will ''iv-e prominence to our School not only in this country but Europe —as this line of work was first started in Germany a few years ago. I forgot to state that Mr. Smith the Govts Special Agent is in Auburn making a careful analysis of samples of the various kinds of food collected here viz: cow peas, corn meal, Flour, butter, native beef, mutton, pork and chickens.
